Make your own lactose free butter/ herb butter


Herb butter is really delicious, for example on a baguette. But herb butters from the supermarket contain lactose. Luckily it’s not hard to make it lactose free on your own, and it tastes delicious!

With this recipe you can make about 200 grams of herb butter.

Ingrediënts:

  • 500 ml heavy cream
  • (Sea) Salt
  • Lemon juice
  • Garlic
  • Herbs (for example chives and parsley)
  • Disolact lactase drops from Disolut

Other things you need:

  • Mixer
  • Dish towel
  • 4 bowls
  • Sieve
  • cutting bord
  • Knife
  • Garlic press/grater
  • Spoon/fork

To make lactose free butter, you’ll need heavy cream and the disolact lactase drops. Put the heavy cream in a bowl and add 10 drops of the disolact lactase drops. Stirr it very well and put it in the fridge for about 24 hours, so the lactose will be converted. After this you can start making your lactose free butter!

Take the (lactose free) heavy cream out of the fridge and whip it with the mixer, for about 4-5 minutes. First the heavy cream will become whipped cream. Then keep whipping it and you will see there will occur clumps of butter with liquid, buttermilk, beside it. Now you can stop whipping.

Take the sieve and put a bowl underneath it. Grab the dish towel and put it in the sieve. Throw the whipped heavy cream in the dish towel. Take the ends of the dish towel and squeeze the buttermilk out of the butter. When you open the dish towel, you can see a clump of butter in it!

Now you need a bowl with cold water. Put the clump of butter in the bowl with cold water and knead the butter. Now you’re kneading the last buttermilk out of the butter, so it will have a longer shelf life. Then put the butter in the dish towel again, and squeeze the last bit of water out of the butter. Now your lactose free butter is ready!

Chop the herbs and press/grate the garlic. Put the butter in a clean bowl, so you can make the herb butter. Now add the finely chopped herbs, the garlic, lemon juice and some salt. Stirr this with a fork. Here it is, your home made lactose free herb butter!
